What each ingredient does

Cauliflower
Forms the main body of the dish, cooking to a tender texture while holding its shape.
Baking soda
Raises the water's alkalinity, which helps the cauliflower keep a brighter color while cooking.

The step that matters

Add the cauliflower to the boiling water and cook it covered for 20 to 30 minutes. The cauliflower must cook long enough to become tender throughout, and cooking time varies with head size. Partial covering keeps the water near boiling while letting some steam escape, so the florets soften evenly without overcooking into mush.
