What each ingredient does

Winter potatoes
Starchy flesh that cooks soft and forms the body of the dish.

The step that matters

Drying the potatoes after draining. Letting the potatoes sit and shake on the stove evaporates surface water. Drier surfaces keep the potatoes from turning soggy and help them hold their texture when served.
