Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the custard

  1. In a saucepan, stir together the egg yolks, crushed macaroons, sugar, cream, and lemon rind over low heat for 15 minutes.

  2. Allow the custard to cool.

Bake and serve

  1. Preheat the oven to 400°F (200°C).

  2. Fill the darioles with the cooled custard.

  3. Bake for 15 minutes until risen like a soufflé.

  4. Serve immediately with sugar sprinkled on top.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Set the custard and give it a rich, smooth structure as they cook.
Crushed macaroons
Add almond flavour and body, helping thicken the custard mixture.
Cream
Adds fat and moisture, keeping the custard tender rather than dry.
Sugar
Sweetens the custard and helps it brown lightly in the oven.

The step that matters

Bake for 15 minutes until risen like a soufflé. Egg yolks set as they heat, and the custard puffs from trapped steam and air. Removing it too early leaves it runny, while overbaking makes it dry and rubbery as the proteins tighten.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar, cream):

  1. Vanillafits better
  2. Raisinfits better
  3. Strawberryfits about as well
  4. Lemonthe original

Fit is the average pairing score against egg, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
