What each ingredient does

Isinglass
Gelling agent that sets the liquid into a firm jelly as it cools.
Loaf sugar
Adds sweetness and helps give the jelly its body.
Egg white
Coagulates during heating and gathers particles so the jelly clears.
Lemon rind
Adds aromatic citrus flavour to the jelly.

The step that matters

Simmer gently after boiling. A gentle simmer lets the egg white coagulate and rise, carrying impurities to the surface for a clearer jelly. A hard, rolling boil can break up the coagulated particles and cloud the liquid.

Swap the lemon
