What each ingredient does

Lobster
Provides the main meat, which firms and turns opaque as it cooks.
Chablis
Adds acidity and wine flavour as it boils down into the sauce.
Espagnole sauce
Thickens the sauce and adds a rich, savoury body.
Butter
Adds fat for a glossy finish and rounder flavour to the sauce.
Lemon juice
Adds brightness that balances the richness of the butter and sauce.

The step that matters

Frying the lobster meat. Frying in oil sears the cut surfaces so the meat stays firm. Overcooking it makes lobster tough and rubbery, so the later boiling must stay brief.

Swap the clove

How well each one fits the dish's main ingredients (lobster, pepper, parsley, garlic, sauce, butter, lemon):

  1. Tarragonfits better
  2. Thymefits better
  3. Capersfits better
