Make the sauce

  1. Melt the butter in a pan and stir in the flour until well combined.

  2. Add the boiling oyster liquor, cream, sherry, lemon juice, salt, and cayenne; stir until thickened.

  3. Remove gills from oysters, cut them into quarters, and mix them with the chopped mushrooms into the thickened mixture.

  4. Allow the mixture to cool, then divide it into equal pieces.

Shape and fry

  1. Shape the pieces into cutlets, dip them in beaten eggs, and coat with breadcrumbs.

  2. Fry the cutlets in hot oil until golden brown.

What each ingredient does

Flour
Combined with melted butter to form a roux that thickens the sauce.
Butter
Provides fat and flavour for the roux that starts the sauce.
Oysters
Supply the main seafood flavour and tender texture in the filling.
Cream
Adds richness and body to the thickened sauce.
Eggs
Bind the breadcrumb coating so it adheres to the cutlets.
Breadcrumbs
Form a crisp, golden browned coating when fried.

The step that matters

Cool the mixture before shaping. A thickened mixture must cool and firm up before it is divided and shaped; if it is still warm and loose, the cutlets will not hold their form and may break apart in the egg and crumb coating.
