Amber Pudding

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the apples

  1. Peel, core, and slice the apples.

  2. In a saucepan, combine the apples with butter, sugar, and lemon zest. Cook slowly until tender.

  3. Pass the mixture through a fine sieve.

Assemble the pudding

  1. Line the edges of a pie dish with puff pastry and decorate it as desired.

  2. Add the egg yolks to the apple mixture and pour it into the pie dish.

Bake and finish

  1. Bake in a preheated oven at 350°F (175°C) for about 20 minutes.

  2. Whip the egg whites until stiff and spread them over the apple mixture.

  3. Sprinkle with caster sugar and garnish with cherries.

  4. Return the pudding to a cool oven at 300°F (150°C) for about 10 minutes to set the egg whites until lightly browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the bulk and fruity flavour, and cook down to a soft purée.
Eggs
Egg yolks enrich and set the apple base; whipped whites form a light topping that browns.
Butter
Adds richness and fat, helping the apples cook to a smooth, tender texture.
Moist sugar
Adds sweetness and depth, and helps the apples caramelise slightly as they cook.
Puff pastry
Forms a flaky, crisp case that holds the filling in the pie dish.

The step that matters

Whipping and setting the egg white topping. Whites must be whipped until stiff so they hold their shape on the apple base. Overbaking or a hot oven can make them weep or brown too fast, so the low, short second bake is needed to set them gently.

Swap the apple

How well each one fits the dish's main ingredients (sugar, lemon, butter, egg):

  1. Vanillafits better
  2. Orangefits better
  3. Raspberryfits better
  4. Applethe original

Fit is the average pairing score against sugar, lemon, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
