What each ingredient does

Savoy biscuits
Form the bulk of the pudding and soak up the liquid to set into a soft body.
Egg yolks
Thicken the milk mixture as it steams, giving the pudding a set, custard-like texture.
Milk
Provides the liquid that the biscuits absorb and that the eggs set into a custard.
Rum or brandy
Soaks into the biscuits and adds a warm, aromatic flavour.
Apricot jam
Adds sweetness and a fruity flavour between the biscuit layers.

The step that matters

Steaming the pudding. Steam gently and keep the tin covered so the egg and milk mixture sets evenly. Strong heat or boiling water can make the eggs curdle or leave the pudding watery.
