Snipe Pudding, Boiled

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Pluck and singe the snipe, removing the eyes but leaving them whole.

  2. Cut the rump steak into 1.5 to 2-inch square pieces.

  3. Dust the steak pieces with ground white pepper, coarse sea salt, and flour.

  4. Line a large pudding dish with thinly rolled pie crust and dust it with a little flour.

  5. Pack the snipe and steak pieces into the lined pudding dish.

  6. Cover with more pie crust and seal the edges.

  7. Boil the pudding in water for about 1.5 to 2 hours.

  8. Serve hot.
