Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Forms separate layers in the dough that create flakiness as it bakes.
All-purpose flour
Provides the structure that holds the dough layers together.
Egg yolk
Adds richness and helps bind the paste.
Lemon juice
Adds acidity that helps keep the pastry light and tender.

The step that matters

Chilling between rolls. Cold butter must stay solid between folds. If the dough warms, the butter melts into the flour, and the separate layers that give puff pastry its rise are lost.

Swap the lemon

How well each one fits the dish's main ingredients (butter, flour, egg):

  1. Raisinfits better
  2. Vanillafits better
  3. Lemonthe original
  4. Coconutfits about as well

Fit is the average pairing score against butter, flour, egg. Candidates are from the same food group and used in at least 100 recipes.
