Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a deep pie dish, combine the onion, vinegar, water, salt, ginger, pepper, cloves, sugar, bay leaves, and mustard.

  3. Add the brisket and shins to the dish, covering them with the mixture.

Bake and serve

  1. Cover the dish tightly and bake for 2.5 hours.

  2. Serve the beef as is, with dry toast on the side.

What each ingredient does

Brisket
Forms the main body of the dish, becoming tender as its connective tissue slowly breaks down during long, moist cooking.
Shins
Gristly connective tissue softens into gelatin during the long braise, adding body and a rich texture.
Vinegar
Adds acidity that brightens the flavour and helps balance the rich, spiced liquid.
Sugar
Adds sweetness that rounds out the sharp vinegar and warm spices.
Onion
Releases sweetness and aroma into the cooking liquid as it softens.

The step that matters

Cover the dish tightly. A tight cover traps steam so the liquid keeps the meat moist over the long bake. Without it, the surface can dry out and the tough connective tissue may not fully soften.

Swap the onion

How well each one fits the dish's main ingredients (vinegar, ginger, pepper, clove, sugar, mustard):

  1. Horseradishfits better
  2. Capsicumfits better
  3. Shallotfits better
  4. Onionthe original
