Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the potato mixture

  1. Boil the potatoes and mash them through a sieve or beat with two forks.

  2. While hot, mix in the butter, hot milk, pepper, and salt until smooth.

  3. Add the eggs and continue beating until well combined.

  4. Let the mixture cool on a dish.

Shape and cook

  1. Flour your hands and shape the mixture into croquettes.

  2. Roll each croquette in the beaten egg, then in breadcrumbs.

  3. Fry in plenty of boiling fat until golden brown.

  4. Alternatively, shape into flat cakes, place on a greased baking sheet, score the tops, brush with egg, and bake in a 400°F (200°C) oven for a few minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the croquette and give it a soft, starchy body.
Butter
Adds fat for richness and a smoother, more tender mash.
Hot milk
Adds moisture so the mashed potato becomes smooth and pliable for shaping.
Eggs
Bind the mixture so it holds its shape, and the beaten egg coating helps breadcrumbs stick.
Breadcrumbs
Form a crisp, golden outer crust when fried or baked.

The step that matters

Let the mixture cool before shaping. Warm potato mash is soft and sticky, so it tears and sticks to the hands. Cooling firms the starch so the croquettes keep their shape through coating and frying.

Swap the potato

How well each one fits the dish's main ingredients (butter, milk, pepper, egg):

  1. Capsicumfits about as well
  2. Potatothe original
  3. Asparagusfits about as well
  4. Chivefits less well

Fit is the average pairing score against butter, milk, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
