What each ingredient does

Butter
Enriches the sauce and adds richness and a mild flavour to the base.
Cornflour
Thickens the milk into a smooth sauce as it heats and gelatinises.
Milk
Forms the liquid base that the cornflour thickens into a sauce.
Thick cream
Adds richness and a smoother mouthfeel to the finished sauce.

The step that matters

Adding the cream without boiling. Once cream is added, boiling can cause it to separate or become grainy, so the sauce should only be reheated gently.
