What each ingredient does

Eggs
Set the mixture into a thick custard as they cook gently.
Cream
Adds richness and a smooth, velvety body to the custard.
Seville orange juice
Provides sharp acidity that balances the sweetness of the sugar.
Loaf sugar
Sweetens the custard and forms a sweet top layer when sprinkled.

The step that matters

Stir over low heat until thickened like custard, but do not let it boil.. Egg proteins set gradually at moderate temperatures; if the mixture boils, the eggs scramble and curdle, leaving a grainy texture instead of a smooth custard.
