Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure of the paste that wraps the filling.
Suet
Adds fat that makes the paste rich and tender as it cooks.
Baking powder
Releases gas that helps the paste rise and lighten.
Apples
Add moisture and tartness that balance the sweet syrup.
Currants
Add chewy sweetness and small pockets of fruit flavour.
Golden syrup
Adds sweetness and a rich caramel flavour to the filling and sauce.

The step that matters

Tie the cloth tightly at the ends. Loose wrapping lets the paste spread and the filling leak out while boiling. A firm roll keeps the shape and holds the filling in place during the long cook.

Swap the currant

How well each one fits the dish's main ingredients (flour, apple, syrup, cinnamon):
