The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cox's gelatine
Forms the firm, wobbly set of the jelly as it cools.
Orange juice
Provides the main orange flavor and liquid for the jelly.
Loaf sugar
Adds sweetness and balances the acidity of the citrus juices.
Lemon juice
Adds acidity that brightens the orange flavor.

The step that matters

Dissolving the gelatine fully before straining. Gelatine must dissolve completely in the hot liquid; any undissolved granules or boiling that is too vigorous can leave the jelly grainy or weaken its set.
