Ground Rice Pudding

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the rice base

  1. Break the ground rice into a smooth paste with a little milk.

  2. Boil the rest of the milk in a saucepan.

  3. Pour the boiling milk onto the ground rice.

  4. Put the milk and rice into a rinsed pan.

  5. Bring to a boil.

  6. Cook for about 5 minutes.

  7. Remove from heat.

  8. Add the sugar.

  9. Let cool slightly.

Add the eggs and bake

  1. Beat the eggs.

  2. Add the yolks to the rice.

  3. Mix well.

  4. Beat the egg whites until stiff.

  5. Gently fold into the mixture.

  6. Turn into a greased pie dish.

  7. Bake at 350°F (175°C) for about 20 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground rice
Thickens the milk into a smooth, creamy pudding as it cooks.
Milk
Forms the liquid base that the rice thickens and gives the pudding its body.
Eggs
Add richness and help set the pudding, while the whites lighten it when folded in.
Sugar
Sweetens the pudding and softens the set texture slightly.

The step that matters

Folding in the beaten egg whites. Stiff whites hold air that lightens the pudding. Folding gently keeps that air in; stirring vigorously deflates the foam and leaves the pudding dense.

Swap the lemon

How well each one fits the dish's main ingredients (rice, milk, egg, sugar):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits about as well
  4. Lemonthe original

Fit is the average pairing score against rice, milk, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
