Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mixed vegetables
Release flavour and body into the water as they simmer.
Brown sugar
Adds a little sweetness and helps the stock taste rounder and deeper.

The step that matters

Cook until tender but not mushy. Overcooked vegetables break down and can turn the stock cloudy and muddy in flavour. Stopping when they are just tender keeps the stock clear and clean-tasting.

Swap the onion

How well each one fits the dish's main ingredients (carrot, celery, sugar):

  1. Parsnipfits better
  2. Turnipfits better
  3. Leekfits better
  4. Onionthe original

Fit is the average pairing score against carrot, celery, sugar. Candidates are from the same food group and used in at least 100 recipes.
