Why it works: Sauce and parsley are a kitchen classic. They rank in the top 23% of all ingredient pairs, and cooks put them together in 6,693 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

6 rollsIngredients
Directions
Prepare the rolls
Cut the rolls in half and trim the edges to make them stand firmly.
Scoop out the crumbs and place the rolls in a cool oven to dry.
Fill and set
Mix enough liquid aspic jelly into the mayonnaise sauce to stiffen it.
Line the inside of the cooled rolls with the mayonnaise mixture and let it set.
Place 2 teaspoons of Russian caviar in the center of each roll.
Top each with a little chopped aspic jelly or fill with half-set aspic.
Garnish the surface with small strips of filleted anchovies and parsley.
Serve when completely set.

What each ingredient does
- Mayonnaise sauce
- Stiffened with aspic, it forms a firm, creamy lining that holds the filling in place.
- Liquid aspic jelly
- Gelatin-based setting agent that stiffens the mayonnaise and lets the filling hold its shape.
- Russian caviar
- Provides the salty, briny flavour and luxurious centre filling of each roll.
- Small stuffing rolls
- Serve as the edible shell, dried in the oven so they hold their shape under the filling.
- Filleted anchovies
- Add a salty, savoury accent to the garnish on top.
The step that matters
Let the mayonnaise-aspic lining set fully before adding the caviar. Aspic is gelatin-based and sets as it cools. If the mixture is still too warm or only partly set, the lining stays soft and the filling can sink, mix in, or leak out when the roll is cut or served.
Swap the parsley
How well each one fits the dish's main ingredients (sauce, caviar):
- Capersfits better
- Tarragonfits better
- Parsleythe original
- Garlicfits about as well
Fit is the average pairing score against sauce, caviar. Candidates are from the same food group and used in at least 100 recipes.
