Rougets a LA Portugaise [Red Mullet, Portuguese Style]

Oven, in the book's wordsA fairly hot oven

Ingredients

Directions

The book says “a fairly hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Clean, wipe, and dry the red mullet.

  2. Arrange the fish in a buttered sauté pan and season with salt, pepper, and lemon juice.

  3. Sprinkle oiled butter over the fish and cook in a 400°F (200°C) oven for 10 minutes.

  4. Prepare a tomato puree flavored with meat glaze and reduce it to a half-glaze consistency.

  5. Place the red mullet on a buttered serving dish and cover with the prepared sauce.

  6. Return the dish to the oven for another 10 minutes before serving.
