Quenelles De Saumon a LA Royale

Ingredients

Directions

  1. Remove the flesh from a large crab and flake it, reserving some for garnish.

  2. Pound the crab meat until smooth, then mix in ½ cup of bechamel sauce.

  3. Season with salt, pepper, and aromatic spice, then rub through a sieve.

  4. Incorporate ¼ cup of stiff aspic and fill small savarin molds that have been coated with aspic and decorated with truffle strips or pimiento.

  5. Chill the molds on ice for about two hours, then turn them out onto small round dishes.

  6. Fill the centers with the reserved flaked crab and decorate with lobster coral or chopped pistachios.

  7. Serve with a sauce made of mayonnaise, whipped cream, a little French mustard, and grated horseradish, keeping the sauce chilled until serving.
