Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. In a bowl, combine the yolks of the eggs and sugar, and cream together.

  2. Add the grated rind and juice of the lemons, and melted butter.

  3. Place the bowl over a pot of boiling water, add the whisked egg whites, and stir until thickened. Allow to cool.

  4. Line tartlet tins with rough puff-paste.

  5. Fill the tins three-quarters full with the mixture and bake at 350°F (175°C) for about 15 minutes.

  6. Brush with beaten egg whites, sprinkle with sugar, and return to the oven for another 5 minutes until golden.
