The Queen of Puddings

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard base

  1. Soak the breadcrumbs in the heated milk.

  2. Add the lemon zest and beaten egg yolks. Mix well and pour into a baking dish.

  3. Bake at 350°F (175°C) until set.

Top with meringue and bake

  1. Whip the egg whites until stiff. Gradually add powdered sugar to the whipped egg whites.

  2. Spread the meringue over the pudding.

  3. Bake until golden.

  4. Serve warm.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Breadcrumbs
Soak up the warm milk to form the body of the pudding.
Eggs
Yolks set the custard; whites whip into the meringue topping.
Milk
Hydrates the breadcrumbs and supplies liquid for the custard to set.
Powdered sugar
Dissolves easily into the whites, sweetening and stabilizing the meringue.

The step that matters

Whipping the egg whites until stiff. Egg whites must be beaten to stiff peaks so the meringue holds its shape and bakes into a light, airy topping. Underwhipped whites can weep or collapse, and any trace of yolk or grease will stop them from whipping properly.

How well each one fits the dish's main ingredients (milk, egg, sugar, brandy, sherry):

  1. Vanillabetter flavor fit
  2. Figbetter flavor fit
  3. Apricotbetter flavor fit
  4. Lemonthe original

Fit is the average pairing score against milk, egg, sugar, brandy, sherry. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
