Bread Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Combine the bread crumbs and milk in a bowl.

  3. Add the sugar, eggs, and flavoring or raisins, and mix well.

  4. Pour the mixture into a baking dish.

Bake and top

  1. Bake until set and lightly browned on top.

  2. Spread jelly or stewed fruit over the top.

  3. Beat the egg whites until stiff and spread over the pudding.

  4. Return to the oven for a few minutes until the egg whites are light brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Form the body of the pudding and soak up the milk and egg to set into a soft custard.
Milk
Provides the liquid that softens the crumbs and sets with the eggs into a custard.
Eggs
Bind the mixture and set it into a tender, custard-like texture when baked.
Sugar
Adds sweetness and helps the top brown lightly in the oven.

The step that matters

Beat the egg whites until stiff and spread over the pudding. Stiff whites hold their shape and form a stable meringue topping; under-beaten whites run into the pudding and bake flat and weepy. Browning them only briefly keeps the meringue from over-cooking and toughening.
