Salmon in Aspic

Ingredients

Directions

  1. Cut a dozen small blocks from a piece of cooked salmon.

  2. Arrange the salmon pieces in even rows on a shallow tin, ensuring the edges are slightly above the salmon.

  3. Cover the salmon completely with well-flavored aspic and let it set.

  4. Once the aspic is completely stiff, cut out each block surrounded by a coating of aspic.

  5. Place a little salad in a dozen ramekin cases and lay one block of salmon in each case.

  6. Serve immediately.
