Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Cut the oysters into quarters.

  2. In a saucepan, combine butter and flour, rubbing them together over medium heat.

  3. Add the oyster liquor and stir until it boils.

Make the sauce

  1. Remove from heat and add all ingredients except breadcrumbs.

  2. Reheat gently without boiling.

Bake and serve

  1. Butter a small pudding dish and pour the mixture in.

  2. Cover thickly with breadcrumbs and dot with small pieces of butter.

  3. Bake in a 400°F (200°C) oven until browned and serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main seafood body and flavor of the dish.
Flour
Thickens the butter and liquor into a smooth, binding sauce.
Cream
Adds richness and a smooth, silky texture to the sauce.
Egg yolk
Enriches and helps thicken the sauce when gently heated.
Breadcrumbs
Form a crisp, browned topping that contrasts with the soft filling.

The step that matters

Reheat gently without boiling. Boiling a sauce containing egg yolk can cause it to curdle and turn grainy, because the yolk proteins set and separate under high heat. Gentle heat keeps the sauce smooth and thick.

Swap the parsley

How well each one fits the dish's main ingredients (oyster, cream, anchovy, sauce, pepper, flour, egg):

  1. Capersfits better
  2. Nutmegfits about as well
  3. Parsleythe original
  4. Tarragonfits about as well
