Lemon Rice

Ingredients

Directions

Cook the rice

  1. Boil the rice with the milk and 1 tablespoon of sugar until the rice absorbs all the milk.

  2. Transfer the rice to a mold and let it cool before turning it out onto a serving dish.

Make the lemon syrup

  1. Peel the lemon, removing a thick layer of skin, and cut the peel into shreds about ¾ inch long.

  2. Boil the lemon peel in a little water for 1 minute, then discard the water.

  3. In a saucepan, combine the lemon peel, 1 cup of fresh water, the lemon juice, and 2 tablespoons of sugar, and simmer for 2 hours.

  4. Once cooled, pour the lemon syrup over the rice.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Forms the bulk of the dessert and sets firm as it cools in the mold.
Milk
Is absorbed by the rice, giving it a creamy, tender texture.
Sugar
Sweetens the rice and the lemon syrup.
Lemon
Its peel and juice provide aroma and sharp acidity to the syrup.

The step that matters

Simmering the lemon peel in syrup for 2 hours. Long, gentle simmering softens the peel and draws out its flavour, while a rolling boil can make the syrup bitter and cloudy. Blanching the peel first also reduces bitterness from the pith.
