Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brown sugar
Provides the bulk of the sweetness and the caramel flavour of the toffee.
Butter
Adds fat and richness, giving the toffee a smooth texture and buttery flavour.
Powdered ginger
Adds warm, spicy aroma that complements the caramelised sugar.

The step that matters

Testing the cold-water drop. Sugar syrup must reach the hard-crack stage to set firm when cooled. Removing it too early leaves a soft, sticky toffee, while cooking too long can make it brittle or burnt.

Swap the ginger

How well each one fits the dish's main ingredients (sugar, butter):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Gingerthe original
  4. Capersfits less well

Fit is the average pairing score against sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
