What each ingredient does

Coarse oatmeal
Forms the body of the porridge as its starch thickens when cooked in water.
Water
Hydrates the oats so they soften and swell into a thick, spoonable porridge.

The step that matters

Adding the oatmeal to boiling water. Adding oats gradually to boiling water while stirring keeps them from clumping into lumps. Stirring during the long simmer helps prevent sticking and scorching on the base of the pan.
