Lemon Buns

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. In a basin, combine the whole meal flour and butter, rubbing them together.

  2. Add the castor sugar, candied peel, grated lemon rind, and baking powder.

  3. In a separate bowl, beat the eggs and mix in the milk and juice from half a lemon.

  4. Combine all ingredients and mix well.

Shape and bake

  1. Divide the mixture into sixteen portions and place them in a greased tin.

  2. Brush the tops with beaten egg and milk, then sprinkle with castor sugar.

  3. Bake in a preheated oven at 350°F (175°C) for twenty minutes.

What each ingredient does

Whole meal flour

Butter
Rubbed into the flour to add richness and tenderness to the crumb.
Eggs
Bind the mixture and add structure and richness as they set in the oven.
Baking powder
Releases gas in the oven, helping the buns rise and become light.
Castor sugar
Adds sweetness and helps the tops brown and crisp when sprinkled on.
