What each ingredient does

Marrow
Forms the main body of the dish, cooking to a soft, tender texture inside.
Wholemeal batter
Forms a coating that crisps when fried and holds the slices together.
Butter or oil
Conducts heat to fry the slices and adds richness and browning to the surface.
