Why it works: Lentils and onion match in chemistry and in kitchens. They rank in the top 8% of all ingredient pairs, and cooks put them together in 1,221 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Potted Lentils

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Wash the lentils and place them in a large jar of water.

Stew

  1. Stew the lentils very slowly in the oven at 300°F (150°C) until soft.

  2. Add the chopped onion, oil, pepper, and salt.

  3. Continue to stew until the mixture reaches a porridge-like consistency, being careful not to let it burn.

Pot and seal

  1. Once ready, pot the lentils in small jars, spread a little butter on top, and seal tightly.

What each ingredient does

Lentils
Form the main body of the dish and, once stewed, thicken into a porridge-like texture.
Butter
Adds richness and a fat layer on top that helps seal the surface of the potted lentils.
Onion
Adds savoury sweetness and aroma as it softens during the slow stew.

The step that matters

Continue to stew until porridge-like. Slow, gentle heat lets the lentils break down and thicken evenly. If the heat is too high or the pot is left unattended, the bottom can scorch and the dish takes on a burnt flavour.

Swap the lentils

How well each one fits the dish's main ingredients (butter, onion, pepper):

  1. Black-eyed peafits better
  2. Sesamefits better
  3. Beansfits better
  4. Lentilsthe original

Fit is the average pairing score against butter, onion, pepper. Candidates are from the same food group and used in at least 100 recipes.
