Why it works: Lemon and ginger match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 5,154 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Marrow Ginger

Ingredients

Directions

Prepare the marrow

  1. Peel the marrow, remove all seeds, and cut it into pieces about three inches long.

  2. Place the pieces in an earthenware pan and cover with sugar, using ½ cup of sugar for every pound of marrow.

  3. Let it stand overnight until the marrow floats in syrup.

Cook and bottle

  1. Transfer the mixture to a preserving pan or clean saucepan.

  2. Add the sliced lemon and the bag of crushed ginger.

  3. Boil until the mixture is clear, then remove the bag of ginger.

  4. Pour the preserve into jars or bottles.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Marrow
Forms the bulk of the preserve and becomes tender and translucent as it cooks in syrup.
Sugar
Draws moisture out of the marrow to form the syrup and acts as a preservative.
Lemon
Adds acidity that brightens the flavour and helps balance the sweetness.
Ginger
Contributes warm, aromatic spice that flavours the syrup as it boils.

The step that matters

Boil until the mixture is clear. Boiling must continue long enough for the sugar to concentrate and the marrow to turn translucent. Stopping early leaves a thin syrup that may spoil, while overcooking can make the pieces tough and the sugar crystallise.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, ginger):

  1. Lemonthe original
  2. Orangefits about as well
  3. Limefits less well
  4. Vanillafits less well

Fit is the average pairing score against sugar, ginger. Candidates are from the same food group and used in at least 100 recipes.
