Why it works: Pepper and nutmeg match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 13,015 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Duchess Potatoes

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the potatoes

  1. Wash and peel the potatoes.

  2. Boil the potatoes until tender.

  3. Drain the water.

  4. Let the potatoes dry in a 400°F (200°C) oven for a few minutes, covered.

  5. Pass the warm potatoes through a wire sieve.

Make the mixture

  1. Mix in the egg yolks, clarified butter, and cream while still warm.

  2. Season with pepper, coarse sea salt, and grated nutmeg.

  3. Turn the mixture onto a floured board.

  4. Divide the mixture into twelve equal parts.

  5. Shape each part into a square.

  6. Trace lines on the surface of each square with a knife.

Bake and serve

  1. Place the squares on a buttered baking sheet.

  2. Brush the tops with egg.

  3. Bake in a 400°F (200°C) oven until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mealy potatoes
Their starch gives a light, fluffy body that holds the piped or shaped form.
Egg yolks
Add richness and bind the mixture so it holds its shape.
Clarified butter
Adds fat for smooth texture and rich flavour.
Cream
Adds moisture and softness to the mashed potato.
Egg
Brushed on top, it promotes browning and a glossy golden finish.

The step that matters

Pass the warm potatoes through a sieve and mix in the yolks while still warm. Warm potatoes absorb fat and yolk evenly and stay smooth; cold potatoes turn stiff and lumpy, and overworking releases starch, making the mixture gluey.

Swap the potato

How well each one fits the dish's main ingredients (butter, cream, egg, pepper, nutmeg):

  1. Spinachfits about as well
  2. Potatothe original
  3. Leekfits about as well
  4. Capsicumfits about as well

Fit is the average pairing score against butter, cream, egg, pepper, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
