What each ingredient does

Breadcrumbs
Swell and absorb the liquid, thickening the sauce into a smooth body.
Milk
Forms the creamy liquid base that the breadcrumbs thicken and the onion flavours.
Butter
Adds richness and a silky mouthfeel when stirred in at the end.
Onion
Infuses its savoury aroma into the milk during simmering, then is removed.

The step that matters

Boil gently for about 15 minutes. Breadcrumbs keep absorbing liquid and thickening as they simmer. Milk scorches and sticks to the base of the pan at high heat, so a gentle boil with regular stirring keeps the sauce smooth.
