Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Whipped to form the light, airy body of the dessert.
Gelatine
Sets the liquid mixture so the dessert holds its shape when unmolded.
Sugar
Sweetens the dessert and balances the sherry and lemon.
Sherry
Adds aroma and a mild, wine-like flavour to the dessert.
Lemon rind
Provides aromatic citrus flavour that is drawn into the warm liquid.

The step that matters

Strain the gelatine mixture into the whipped cream, stirring continuously. Gelatine begins to set as it cools, so if it cools too much before it is folded in, it forms lumps or strings instead of blending smoothly into the cream. Stirring keeps it evenly dispersed.

Swap the lemon
