What each ingredient does

Gelatine
Sets the mixture so it holds its shape when turned out of the mold.
Double cream
Adds richness and a light, creamy texture when whipped into the base.
Apricots
Provide the main flavour and body of the cream.
Castor sugar
Sweetens the apricot base and balances its tartness.
Lemon juice
Adds acidity that brightens the apricot flavour.

The step that matters

Stir in the whipped cream while the mixture is cold but not setting. If the base is too warm, the whipped cream deflates and loses volume; if it has already set, the cream cannot blend in evenly and lumps form. Timing keeps the mousse-like texture smooth and airy.
