Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base and, with the junket tablet, sets into a soft custard-like texture.
Junket tablet
Contains rennet, which causes the milk proteins to coagulate and set the mixture.
Sugar
Adds sweetness to balance the coffee and the mild flavour of the milk.
Coffee
Adds bitterness and aroma that flavour the set junket.

The step that matters

Add the dissolved junket tablet and stir quickly. Rennet begins setting milk within minutes, so the tablet must be evenly dispersed before the mixture sits. Slow or uneven stirring leaves pockets that set unevenly.
