Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the ice

  1. In a basin, mix the custard, whipped cream, coffee essence, and liqueur.

  2. Freeze the mixture until very firm.

Assemble

  1. Layer wafers in a fireproof dish.

  2. Pile the ice mixture on top in a neat pyramid shape.

  3. Beat the egg whites and 3 oz. sugar until stiff peaks form to make a meringue.

  4. Cover the ice mixture with the meringue.

  5. Quickly decorate with cherries and angelica.

Bake and serve

  1. Place in a 400°F (200°C) oven for about 6 minutes until the outside is brown and hot, while the inside remains frozen.

  2. Serve immediately.

What each ingredient does

Egg whites
Whipped with sugar into a meringue that insulates the ice and browns in the oven.
Custard
Forms the creamy base of the frozen mixture, giving it body and smoothness.
Whipped cream
Adds richness and airiness, keeping the frozen mixture soft rather than icy.
Sugar
Sweetens the meringue and helps it hold stiff peaks while browning.
Liqueur
Adds aroma and flavour; alcohol also keeps the frozen mixture from freezing rock hard.

The step that matters

Covering the ice with meringue and baking briefly. The meringue must fully seal the frozen mixture and the oven time must be short. Meringue is a poor insulator only when thin; a complete, thick layer slows heat reaching the ice, so the centre stays frozen while the outside browns.

Swap the angelica

How well each one fits the dish's main ingredients (sugar, cream, coffee, egg):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Gingerfits about as well
  4. Angelicathe original

Fit is the average pairing score against sugar, cream, coffee, egg. Candidates are from the same food group and used in at least 100 recipes.
