What each ingredient does

Halibut
Is the main protein, cooked gently in simmering water until it turns opaque and flakes.

The step that matters

Simmer until done, not boiling hard. Vigorous boiling toughens fish proteins and breaks the flesh apart, while gentle simmering cooks it evenly and keeps it moist and tender.
