Ingredients

Directions

The book says “a sharp oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the potatoes

  1. Wash and scrub the potatoes.

  2. Cut a small piece off one end of each potato.

  3. Bake the potatoes until done.

  4. Cut off the opposite end of each baked potato.

  5. Remove the insides of the baked potatoes.

  6. Press the potato insides through a sieve.

Make the filling

  1. Season the mashed potato with salt and pepper.

  2. Melt the butter in a saucepan.

  3. Add the potato puree to the melted butter.

  4. Heat the mixture.

  5. Mix in the egg yolks thoroughly.

  6. Fold in the whipped egg whites gently.

Bake and serve

  1. Fill the potato skins with the mixture.

  2. Arrange the filled skins on a baking tray.

  3. Bake at 400°F (200°C) for 15 minutes.

  4. Serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the bulk and starchy body of the soufflé filling and the shells that hold it.
Butter
Adds richness and fat, carrying flavour and giving the puree a smoother mouthfeel.
Egg yolks
Enrich the mixture and help bind the puree, adding richness and set.
Egg whites
Whipped to foam, they trap air and lift the filling so it puffs in the oven.

The step that matters

Fold in the whipped egg whites gently. Egg white foam holds air that makes the soufflé rise. Stirring or deflating it vigorously knocks out the bubbles, so the filling bakes flat and dense.

Swap the potato

How well each one fits the dish's main ingredients (butter, egg, pepper):

  1. Capsicumfits better
