CEufs Aux Macarons

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the mixture

  1. Crumble the macarons and place them in a bowl with 6 egg yolks and 3 egg whites.

  2. Add the sugar and a little lemon juice.

  3. Melt the butter and mix it well with the other ingredients.

Bake and finish

  1. Pour the mixture into a serving dish.

  2. Place the dish in a large pan of boiling water and bake in the oven at 350°F (175°C) for 30 minutes.

  3. When nearly done, glaze with a little dissolved sugar and briefly pass a salamander over it.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg yolks and whites set the mixture into a soft, custard-like structure as it bakes.
Macarons (in the method)
Crumbled macarons add almond flavour and sweetness and help thicken the mixture.
Butter
Butter adds richness and a smooth, tender texture to the set custard.
Castor sugar
Sugar adds sweetness and helps the glaze brown when briefly heated.

The step that matters

Baking in a water bath. Baking the dish in a large pan of boiling water moderates the oven heat, so the egg mixture sets gently and stays smooth rather than curdling or cracking.
