Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chestnuts
Provide the starchy, mealy body that thickens the soup and gives it its main flavour.
White stock
Forms the liquid base of the soup, carrying the chestnut flavour.
Cream
Adds richness and a smooth, velvety texture to the finished soup.

The step that matters

Rub the mixture through a sieve. Chestnuts contain starch and fibre that stay grainy unless the cooked mixture is pressed through a sieve. Sieving gives the soup a smooth texture before the cream is added.

Swap the chestnut

How well each one fits the dish's main ingredients (cream, pepper):

  1. Chestnutthe original
  2. Pistachiofits about as well
  3. Beansfits about as well
