What each ingredient does

Mackerel
Forms the main body of the dish, becoming firm and flaky as it gently poaches.
Vinegar
Adds acidity that sharpens the flavour and helps preserve the fish when pickling.
Onion
Contributes aromatic sweetness and savoury depth to the poaching liquid.

The step that matters

Simmer very slowly. Gentle heat poaches the fish so it stays moist and tender; boiling vigorously would break up the flesh and toughen the proteins.

Swap the mace

How well each one fits the dish's main ingredients (vinegar, onion, parsley, clove):

  1. Thymefits better
  2. Allspicefits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against vinegar, onion, parsley, clove. Candidates are from the same food group and used in at least 100 recipes.
