What each ingredient does

Lobster
Provides the main flavour and the bulk of the filling.
Eggs
Whipped whites trap air and set during steaming to give the soufflé its lift and structure.
Butter
Adds richness and fat, which softens texture and carries flavour.
Cream
Adds moisture and a silky texture to the custard-like filling.

The step that matters

Folding in the egg whites. Whisked whites hold air that makes the soufflé rise. Folding gently keeps that air in; stirring hard deflates the foam and the result comes out dense.
