Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Stewing steak
Provides the meat that becomes tender during long, slow cooking.
Flour
Coats the steak for browning and thickens the gravy.
Bullock’s kidney
Adds rich, savoury flavour to the stew and gravy.
Onion
Softens and sweetens, adding aroma and body to the gravy.
Butter or dripping
Fat for frying that carries flavour and helps browning.

The step that matters

Fry the steak until nicely browned. Browning through the Maillard reaction builds deep savoury flavour that the long simmer alone cannot create. Dry, well-dredged meat in hot fat browns best; crowding the pan steams it instead.

Swap the onion

How well each one fits the dish's main ingredients (flour, pepper, butter):

  1. Shallotfits better
  2. Chivefits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against flour, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
