What each ingredient does

Sausage meat
Provides the main savoury flavour and fat that gives the filling its richness.
Cooked potatoes
Form the bulk of the filling, giving the croquettes a soft, tender interior.
Beaten egg
Acts as a binder and glue so the breadcrumbs stick to the rolls.
Breadcrumbs
Form a crisp, golden coating that browns when fried.

The step that matters

Fry the croquettes in hot oil until well browned. If the oil is not hot enough, the coating absorbs oil and turns greasy instead of crisping, and the egg-and-breadcrumb coating may separate or the centre may stay cold. Frying in properly hot oil sets the crust quickly and gives browning through the Maillard reaction.

Swap the potato

How well each one fits the dish's main ingredients (meat, egg, thyme, pepper):

  1. Shallotfits better
  2. Capsicumfits better
  3. Mustardfits about as well
  4. Potatothe original

Fit is the average pairing score against meat, egg, thyme, pepper. Candidates are from the same food group and used in at least 100 recipes.
