Why it works: Onion and pepper are a kitchen classic. They rank in the top 11% of all ingredient pairs, and cooks put them together in 68,474 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the onions

  1. Peel the onions and boil them in water until tender.

  2. Cut a slice from the top of each onion to create a lid.

  3. Remove the center of each onion.

Stuff and assemble

  1. Stuff each onion half with a kidney, a small piece of butter, salt, and pepper.

  2. Replace the lid on each onion.

  3. Dredge the onions with flour.

  4. Place the onions in a baking dish.

Bake

  1. Bake at 400°F (200°C) for about 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Tender cooked shells hold the filling and turn sweet and mellow as they bake.
Kidneys
Provide the meaty filling that the onion shells enclose.
Butter
Adds fat that enriches the filling and keeps it moist during baking.
Flour
Helps the outside brown and form a light, dry crust.

The step that matters

Boil the onions until just tender. Boiling softens the onions so they can be cut and hollowed, but overcooking makes the shells fragile and prone to tearing when the centers are removed and the lids are replaced.

Swap the onion

How well each one fits the dish's main ingredients (butter, pepper, flour):

  1. Shallotfits better
  2. Chivefits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against butter, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
