Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemons
Peel supplies aromatic oils and juice supplies sharp acidity.
Sugar
Adds sweetness that balances the sharpness of the lemon.
Gelatine
Sets the liquid into a firm, sliceable jelly as it cools.
Egg whites
Coagulate when boiled, trapping particles so the jelly clarifies.
Sherry
Adds a wine-based flavour and aroma.

The step that matters

Boiling with the egg whites. Egg whites must be whisked in and brought to a boil so they coagulate and trap cloudy particles. Boiling too gently or stirring too late leaves the jelly cloudy after straining.
