Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a light, wobbly structure as it cools.
Egg whites
Whipped to foam, they give the pudding its light, airy snow-like texture.
Loaf sugar
Sweetens the pudding and helps stabilise the mixture.
Lemon
Adds acidity and aroma from its juice and rind.

The step that matters

Fold the stiff egg whites into the cooled mixture.. If the mixture is still warm, it can deflate the whipped whites and make the pudding dense. Cooling it first keeps the foam intact.

Swap the lemon
